The Frutalyser is a novel high-sensitivity gas measurement device designed to monitor critical physiological parameters inside the fruit: oxygen (O₂), carbon dioxide (CO₂) and ethanol (CH₃CH₂OH). Using a micro-perforating probe inserted into the core of the fruit and connected to a suction cup that ensures airtight sealing, the system continuously captures the gases released by the fruit and analyses them via an ultra-sensitive NDIR infrared sensor, complemented by humidity and temperature sensors.

The innovation of the Frutalyser lies in its ability to detect early signs of metabolic stress, fermentation or quality loss before they become visible. Unlike conventional methods (destructive analyses or laboratory sampling), the Frutalyser enables real-time, multi-point monitoring within refrigerated storage rooms for fruit and vegetables. Its architecture allows the parallel management of several fruit batches, with up to five independent channels per unit.

This approach opens up new opportunities for agricultural and agri-food sectors: dynamic adjustment of storage conditions (atmosphere, temperature, humidity), logistics optimisation and reduction of post-harvest losses. The Frutalyser therefore acts as a predictive and decision-support tool for growers, cooperatives and marketers, contributing to better quality control, reduced food waste and enhanced crop value.

By integrating artificial intelligence and data analysis in the future, it will provide even more precise control algorithms to continuously adapt storage and ripening strategies.
